Ingredients:
- ¼ cup cooked or steamed Diced Carrot
- ½ cup Cashews (presoaked for 4-6 hours or overnight)
- 1 tsp Lactic Acid Powder (optional)
- 1 tbsp Nutritional Yeast (purchase either online or at a high-end grocery store)
- 1/4 tsp Black Pepper cracked
- 1 tsp Soy Sauce
- 1 tbsp Olive Oil
- 2 tbsp Arrowroot Powder
- 1 tsp Garlic Powder
- 1 ½ tsp Apple Cider Vinegar
- 1 cup (approximately) Water
Put all the ingredients into a blender. Add about ½ cup of water and blend until it’s smooth and homogenised. Add about ¼ – ½ cup of water more and blend again until the mixture has the consistency of a very thick smoothie.
Pour the mixture into a pan and heat it to medium, stirring constantly to prevent lumps from forming. As the mixture is heated, the starch from the arrowroot powder will be activated and the mixture will slowly thicken. Make sure you continue stirring and scraping the sides of the pan so that the entire mixture stays smooth. When it has reached the consistency of thick pudding, take it off the heat and transfer it into a bowl.
The cheese spread can be consumed as it or put into the refrigerator for a few hours where it will thicken up even more. Spread it on crackers, toast, fresh rotis or dip carrot and cucumber sticks into it and enjoy this deliciously cheesy treat!
