Pizza with Garlic & Herb Mayo Dip

Home-made or Store-bought Pizza base

Ingredients for Cheese Topping:

  • ½ cup Steamed Cauliflower
  • ½ cup Cashews – soaked for 3-4 hours or boiled
  • 1 ½ Cup Water (as required to achieve ideal consistency)
  • 1 tbsp Olive Oil
  • ⅛ tsp Onion powder
  • ½ tsp Garlic powder
  • ⅛ tsp Soya Sauce
  • ½ tsp lactic acid powder (optional)
  • 1 tbsp Nutritional Yeast
  • 1 tsp Apple Cider Vinegar
  • ½ tsp Olive Brine
  • ½ tsp Salt
  • ½ tsp Sugar
  • ¼ tsp black pepper
  • 2 tbsp Tapioca Starch (or 1 tbsp Maida)

To make the Cheese Topping:

Put everything except the water into the blender. Add the water a little at a time in order to create a smooth consistency just like dosa batter, loose but not runny .

Prepare your Toppings, for example

  • 1 cup Mushrooms sliced
  • ½ cup Corn Steamed
  • 1 Onion sliced medium thick
  • 1 each of Green, Yellow, Red Bell Pepper sliced medium thin
  • 5-6 Black Olive.
  • Olive Oil to Saute
  • Pepper and Salt to season

Heat a pan to high. Sear the vegetables (in this case, mushrooms, onion and capsicum) on high flame, drizzle olive oil and salt on them and set aside. Slice the olives into rings.

Pizza Sauce

If you don’t have a store-bought jar or have the time to cook it, here’s a hack for a quick and easy Marinara Sauce:

  • 1/2 cup Tomato Ketchup
  • 1/2 tsp Oregano
  • 1/2 tsp Basil
  • 1 tsp Chili Flakes
  • 1/2 tsp Salt
  • 1 tsp Chopped Garlic
  • 1 tsp Paprika

Mix everything together and you’re done!

TO ASSEMBLE THE PIZZA

Put the tawa on medium heat until it is adequately hot.
Place the readymade pizza base on the tawa.
Apply the tomato sauce on top of it and spread it to the edges of the pizza.
Carefully pour the liquid mozzarella on top without getting too close to the edges.
Place the toppings on top of the cheese.
Cover the pan and let it cook on low heat.

  • For the Garlic Mayonnaise:
  • ¾ cup Mayo (you’ll find a plant-based mayo recipe here)
  • 1-2 cloves Garlic
  • Lemon Juice
  • Mixed Herbs
  • Salt and Pepper to taste

Mix it all together and you’re ready to indulge!
