Tea & Coffee

TEA

Ingredients:

  • 1 cup Water
  • 2 pods Cardamom
  • 2 to 3 blades Lemon Grass (based on length)
  • ½ inch Ginger
  • ½ tbsp Tea Powder
  • ½ cup Plant-based Milk (we used Soya Milk)
  • 1 – 2 Tbsp Sugar / Jaggery as per taste

Heat the water. When it comes to a boil, add the crushed cardamom. Let it release its flavour in the boiling water for a minute. Add the lemon grass (that you’ve cut into small pieces) and let it boil for another minute. Add the grated ginger and again let it boil for a minute or so. Then turn off the heat and immediately add the tea powder and let the tea steep for about 5 minutes. Strain the tea and spices and bring the liquid to a boil, and then turn down the heat and stir in the plant-based milk of your choice. Let the mixture simmer for about 15 seconds, stirring constantly. If you’d like to sweeten your tea, now’s the time to add the sugar or jaggery. Let it simmer together for another 15 seconds or so.
Serve immediately and savour the deliciousness.

Don’t hesitate to use different plant-based milks to obtain different tastes and creaminess. Though the tastes may be different, they are all equally delicious!

COFFEE

Ingredients:

  • ½ cup Water
  • 1 pinch Cardamom Powder
  • ¼ cup Coffee Decoction
  • ½ cup Soya Milk
  • ½ cup Coconut Milk
  • 1 pinch Nutmeg Powder
  • 1 – 2 Tbsp Sugar / Jaggery as per taste

Add the cardamom powder to the water in a pot and bring to a boil. Keep heat on medium high so that the cardamom releases its flavour. Add the coffee decoction and immediately bring heat down to low (boiling coffee may make it lose its flavour). Slowly stir in the two milks and heat for 15 to 20 seconds while stirring constantly. Add a pinch of nutmeg powder and continue heating for about 10 seconds. If you’d like a sweetener, add sugar or jaggery and continue heating for 15 – 20 seconds more. Take off the heat, serve and enjoy!
